- 5 oz Red Leaf Lettuce, cut into bite-size pieces
- 1 cup(s) angel sweet tomatoes, halved
- 2 cup(s) hot house cucumbers, thin sliced
- 4 each red onions, rings separated
- 1 tbsp fresh ginger root, fine chopped
- 4 each red radishes, thin sliced
- 1/4 cup(s) Fresh Mint
- 1/4 cup(s) fresh cilantro, only leaves
- 1/4 cup(s) fresh basil
- 2 tbsp extra virgin olive oil
- 1/4 cup(s) lime, juiced
- 1/4 tsp crushed red pepper flakes
- 1 tbsp dijon mustard
- 1/4 cup(s) Unsalted Dry Roasted Peanuts, chopped
Instructions
- Layer lettuce, tomatoes, cucumbers, onion, ginger, radish, mint, basil and cilantro in a large salad bowl or platter. Cover salad and keep refrigerated until ready to serve.
- Combine olive oil, lime juice, crushed red pepper, mustard and 1/2 cup water in a small jar or salad cruet and shake.Keep at room temperature until ready to serve.
- Before serving, add vinaigrette to salad and toss. Sprinkle with peanuts if desired.
