
Thai Curry Poppers

Ingredients
- 1 cup Coconut cream
- 3 oz Thai red curry paste
- 2 tbsp Rice powder
- 1 tsp Fish sauce
- 8 Jalapeño peppers, slice stem end off and split lengthwise. Scoop the seeds and pith from the pepper half.
- 2 Basil leaves, small leaves
- 2 Mint leaves, small leaves
- 24 oz Applewood bacon
- 1 tbsp Sweet chili sauce
Instructions
- Heat oven to 325ºF. Line a sheet pan with foil and set aside.
- Place coconut fat in a medium mixing bowl (reserve water for another purpose). Add curry paste, rice powder and fish sauce. Mix thoroughly and place in a disposable piping bag or ziplock bag.
- Arrange jalapeño shells cut side up on prepared sheet pan. Pipe coconut mixture into the well of each shell to fill cavity. Place two basil leaves and two mint leaves over the filling.
- Starting at the stem end, wrap one slice of bacon around each pepper and filling to cover the length of the popper. Spread sweet chili sauce over the top of and bake for 35 minutes until the bacon is crisp.
