
Thai Coconut Curry Rice

Ingredients
Serves 4
- 1 3/4 cup(s) Jasmine rice
- 2 1/2 cup(s) water, (plus more for rinsing rice)
- 1 tsp kosher salt, (or to taste)
- 1 each 9.8 oz jar Watcharee's Coconut Curry Sauce
- 4 oz matchstick carrots, (or about 1 cup)
- 1/4 cup(s) green onions, finely chopped
Instructions
- Pour rice in a medium-size pan and add enough cool water to cover by about 1 inch. Swirl rice with hands or a spoon and drain water. Repeat several times until water runs clear.
- After final rinse, add 2 1/2 cups of water to rice along with salt. Bring to a boil, reduce heat to low and cover with a lid. Cook for 15 minutes.
- Remove from heat. Add coconut curry sauce, carrots, and green onions. Stir through then replace lid and allow to sit for 5 minutes before serving.
- Chef's note: garnish with chopped fresh cilantro or Thai basil if desired.
