Ingredients
Serves 4
- 4 each H‑E‑B Texas Toast Enriched White Sliced Bread, 4 slices, plus more as needed
- 4 tbsp extra virgin olive oil, divided use, 2 tbsp for bread and 2 tbsp for arugula, plus more as needed
- 2 each large garlic cloves, or as needed for rubbing on toast
- 2 cup(s) arugula, plus more as needed
- 2 tbsp fresh squeezed lemon juice, or as needed for taste
- 1/3 cup(s) H‑E‑B Italian Style Basil Pesto Sauce, or as needed
- 1/2 cup(s) BelGioioso Stracciatella Burrata Filling, or as needed
- 2 oz Mortadella, approximately 4 slices or as needed
- 2 oz traditional Coppa, or as needed
Instructions
- Preheat oven to 375ºF. Line a sheet pan with parchment paper.
- Arrange 4 slices of bread on pan and brush each liberally with olive oil.
- Bake 10 to 12 minutes or until bread is nicely toasted and browned. Remove from oven and rub hot bread evenly with garlic cloves for flavor.
- While bread is cooling, place arugula in a bowl along with remaining olive oil and lemon juice. Toss to combine and season to taste with salt and pepper. Set aside.
- To assemble sandwiches, spread a spoonful of pesto evenly on each slice of bread followed by a spoonful of burrata filling.
- Lay slices of mortadella and coppa evenly over burrata followed by dressed arugula. Serve immediately.
