  • 8 oz salted butter, softened at room temp, divided use, 1 stick for batter 1 stick for peaches
  • 1 cup(s) full fat sour cream, at room temp
  • 2 large eggs
  • 1/3 cup(s) Mi Tienda Peach Nectar, at room temp
  • 1 cup(s) granulated sugar
  • 1 tbsp vanilla extract
  • 2 cup(s) cake flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp fine sea salt
  • 1 tbsp cultured buttermilk blend
  • 3 cup(s) Texas peaches or any available peach variety, about 4 semi-firm peaches, cored and cut into wedges
  • 1/2 cup(s) dark brown sugar

Instructions

  1. Preheat oven to 350ºF. Bring cold ingredients to room temperature while oven preheats.
  2. In the bowl of a stand mixer fitted with the paddle attachment, add all ingredients except 1 stick of butter, sliced peaches, and brown sugar.
  3. Blend on low speed for a few seconds until flour is just incorporated. Raise speed to medium-high and cream mixture for exactly 3 minutes, scraping down sides as needed.
  4. Spray a standard 8 to 9 inch cake pan liberally with non-stick spray. Cut out a circle of parchment paper and press it on bottom of the pan.
  5. Evenly sprinkle brown sugar over parchment paper and arrange peaches over the top to completely cover the bottom.
  6. Cut remaining butter into small pieces and evenly distribute around peaches. Pour cake batter evenly over peaches and smooth out batter to ensure even cooking.
  7. Bake for 40 to 50 minutes or until a toothpick inserted in center of cake pulls out clean. Allow to cool on a rack for at least 45 minutes.
  8. To serve, flip cake over onto a serving dish and gently remove pan and parchment paper. Cut into slices and garnish with whipped cream if desired.
