Texas Hashbrown Breakfast Sandwich

Unsaved Texas Hashbrown Breakfast Sandwich

Ingredients

  • 10 each Texas Shaped Hash browns
  • 5 each slices of Colby jack cracker cut cheese, plus more as needed
  • 5 tbsp salted butter, plus more as needed
  • 5 large eggs, plus more as needed
  • 10 each slices of fully cooked bacon, cooked to package instructions and then strips cut in half

Instructions

  1. Preheat oven to 425ºF.
  2. Place 12 hash browns on a sheet pan lined with parchment paper. Bake for 10 minutes.
  3. Remove hash browns from oven and place two slices of cheese in the center of 5 hashbrowns. (The ones with cheese will be used for the bottom of the sandwich).
  4. Place back in oven and bake an additional 15 minutes or until hash brown is golden brown and cheese is melted.
  5. While hash browns are baking for the second time, set a small non-stick skillet over medium heat and add approximately 1 tbsp of butter.
  6. Fry each egg in butter sunny side up for 3 to 5 minutes or until egg white is just set and yolk is still runny. Add more butter for each egg fried as needed.
  7. Remove hash browns from oven, cool slightly then build sandwiches by placing a fried egg on top of one hash brown followed by bacon strips then add a hash brown without cheese on top.
  8. Repeat steps to build remaining breakfast sandwiches. Serve warm with your favorite condiments.
