
Tangy Cod Ceviche

Serves 2
- 12 oz Cod fillets
- 1/2 tsp Beef Fajita Spice Blend
- 1/2 cup(s) red onions, chopped
- 1 cup(s) celery stalks, chopped
- 2 cup(s) tomato, chopped
- 1 each jalapeño pepper, thin sliced
- 1 each lime, juiced
- 4 tbsp fresh cilantro, chopped
- 1 tbsp extra virgin olive oil
- 2 cup(s) Spring mix
Instructions
- Remove cod fillets from the package and cut into 1/2 inch pieces and place in a microwave safe dish.
- Season the cod with a 1/2 teaspoon of the fajita seasoning. Reserve the remaining fajita seasoning for the Ceviche.
- Cover the dish with plastic wrap and microwave on High power for 3 minutes or until flaky; drain & cool for 15 minutes.
- Combine the drained cod fish, chopped onion, chopped celery, chopped tomato, sliced jalapeño pepper, 1 lime juiced, cilantro, remaining fajita seasoning, and olive oil in a large bowl and toss to combine.
- For each salad, serve 1 1/2 cups Ceviche over 1 cup of Spring Mix greens.
