Ingredients

  • 2 tbsp olive oil
  • 1 lb lean grass fed ground beef
  • 1 tsp green ancho chili seasoning, plus more as needed to taste
  • 7 1/2 oz Siete Corn Tortilla Chips Maiz Totopos - Lime, or any tortilla chips
  • 1 cup(s) black beans with jalapeño & lime, drained of any juice
  • 1 cup(s) pico de gallo, plus more as needed
  • 1 cup(s) H‑E‑B Mi Tienda Molcajete-Style Salsa Roja – Mild/Medium, plus more as needed
  • 1/3 cup(s) green onions, or as needed
  • 3 cup(s) shredded colby cheese, or as needed

Instructions

  1. Preheat oven to 350ºF. Line a sheet pan with non-stick foil and set aside.
  2. Set a sauté pan over medium heat, add oil and allow to get hot before adding ground beef and chili seasoning. Stir-fry until fully cooked. Set aside to cool slightly.
  3. To assemble nachos, evenly arrange tortilla chips on prepared sheet pan.
  4. Spread cooked ground beef, beans, pico de gallo, salsa and green onions over the chips.
  5. Cover everything with a layer of cheese then bake for 10 to 15 minutes or until cheese is fully melted and chips are just toasted.
  6. Allow to rest for a few minutes then top with guacamole and sour cream if desired.
