Sweet Mascarpone Stuffed French Toast

Unsaved Sweet Mascarpone Stuffed French Toast

Ingredients

Serves 4

  • 16 oz mascarpone cheese
  • 3/4 cup(s) powdered sugar, plus more as needed for dusting after cooking
  • 2 tbsp vanilla extract, divided use, 1 tbsp for filling and 1 tbsp for custard
  • 4 each H-E-B Organics 6 Grain White Bread, 4 slices, plus more as needed
  • 5 large eggs
  • 1 1/2 cup(s) half and half
  • 1/4 cup(s) maple syrup
  • 4 tbsp unsalted butter, plus more as needed for cooking

Instructions

  1. In a bowl using a hand mixer whip together mascarpone, powdered sugar and vanilla until creamy and fluffy.
  2. Place 2 slices of bread on a plate and scoop approximately 1/2 cup or more of mascarpone cream in the center of each slice.
  3. Add remaining slices to top of each and gently but firmly press around edges of sandwiches to seal.
  4. Cover and place in freezer and let sit for 30 minutes to allow cream to firm up slightly before cooking.
  5. Meanwhile make custard by combining eggs, half and half, remaining vanilla and maple syrup in a blender and blend until smooth.
  6. Pour custard into a shallow baking dish. Place a large non-stick skillet over medium heat, add butter and allow to melt.
  7. Work quickly to dip each stuffed toast in prepared custard to coat each side thoroughly to avoid burning butter.
  8. Place both in skillet and cook about 3 to 5 minutes per side or until golden brown. Remove from pan, drizzle with maple syrup as needed. Garnish with powdered sugar and seasonal berries if desired.
