Unsaved Sweet Corn Vinaigrette

Ingredients

  • 1 medium H-E-B Super Sweet Corn
  • 2 tbsp fresh squeezed lime juice
  • 2 tbsp Mexican Mesquite Honey
  • 1 tsp Dijon Mustard
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper, (or to taste)
  • 3/4 cup(s) Extra Virgin Olive Oil

Instructions

  1. Remove husk and silks from fresh corn. Using a sharp knife, cut corn from the cob. Using the dull side of the knife, scrape any remaining bits of corn and milky liquid from the cob.
  2. Place corn and scrapped liquid in a bowl. Whisk in lime juice, honey, Dijon mustard, salt and pepper. Drizzle in oil and whisk well.
  3. Chef's Note: Great drizzled over a green salad with loads of fresh herbs or Watermelon and Fennel Salad with Fresh Ricotta (on HEB.com).
