
Steelhead Trout with Creamy Lemon Dill and Crispy Caper Sauce

Ingredients
- 3 tbsp Olive oil
- 1/4 cup Capers, drained and patted dry with a paper towel
- 1 tbsp Adams Reserve Buttery House Rub
- 1 1/2 lb Steelhead trout
- 3/4 cup Fischer & Wieser Four Star Provisions Lemon Dill and Capers Sauce
- 1/4 cup Heavy whipping cream
Instructions
- Heat a skillet over medium-high heat. Add oil and capers, and fry for 3 to 4 minutes or until capers are crispy on the outside. Remove from skillet and set aside.
- Season flesh side of salmon with seasoning. Place flesh side down in skillet and cook 5 or 6 minutes until trout starts to turn light golden brown. Gently flip and continue cooking 4 to 5 minutes or until fish is cooked all the way through with an internal temperature of 145ºF. Transfer to a plate and keep warm.
- Remove any excess oil from hot skillet and reduce heat to low. Add lemon dill sauce and cream to pan. Heat though just until sauce starts to bubble. Drizzle sauce over fish and top with crispy capers.
