
Sprouted Romesco Sauce

Ingredients
Serves 6
- 1/2 cup(s) sliced almonds
- 1 cup(s) extra virgin olive oil
- 1/4 cup(s) red wine vinegar
- 4 each cloves of fresh garlic, lightly crushed
- 1/4 cup(s) shallots, roughly chopped
- 2 each Roma tomatoes, washed, stem removed or cored and roughly chopped
- 1 cup(s) roasted piquillo peppers, or any roasted red pepper, roughly chopped
- 1 cup(s) H-E-B Organic All About That Sprout Sprouted Bread thin sliced, chopped or diced
- 1 1/2 tsp smoked paprika
Instructions
- Place a medium-size sauté pan over medium heat. Add almonds to dry pan and gently toss to evenly toast. Remove from heat and set aside.
- In a blender, combine olive oil, red wine vinegar, garlic, shallots, tomatoes, roasted peppers, bread and smoked paprika.
- Blend until smooth, season to taste with salt and fresh ground pepper. Cover and refrigerate until ready to use.
- Will keep in refrigeration for up to 3 days. Use as a sauce on grilled meats, or as a dip for veggies.
