Unsaved Spinach Fettuccine Alfredo

Ingredients

  • 2 cup(s) 2% milk
  • 3 oz Low fat cream cheese
  • 3 tbsp Unbleached all purpose flour
  • 1 tsp Kosher salt
  • 1/2 tbsp Salted butter
  • 3 each Garlic cloves, crushed
  • 2 cup(s) Fresh spinach, chopped
  • 1/3 cup(s) Italian style, Parmesan cheese, shredded
  • 12 oz Whole wheat fettuccine, cooked

Instructions

  1. Place milk, cream cheese, flour and salt in a blender and blend until completely smooth.
  2. Melt butter in a non-stick saucepan over medium-high heat. Add garlic and cook approximately 30 seconds.
  3. Add in milk mixture and cook 3-4 minutes, stirring constantly until sauce comes to a low simmer.
  4. Add chopped spinach and cook an additional 2 minutes.
  5. Remove from heat and stir in Parmesan cheese.
  6. Cover and let it stand 10 minutes before serving over cooked fettuccine.
