- 6 oz baby spinach
- 1 cup(s) fresh basil leaves, loosely packed, torn or roughly chopped
- 3/4 cup(s) crumbled feta cheese, approximately 1/2 to 3/4 cups, plus more as needed
- 1 cup(s) fresh strawberries, thinly sliced, plus more as needed
- 1/4 cup(s) roasted salted pumpkin seeds or pepitas, or as needed
- 1/3 cup(s) red onions, very thinly sliced
- 1/2 cup(s) bacon vinaigrette, or as needed
Instructions
- In a large salad bowl, combine spinach and basil leaves, and toss to just incorporate.
- Add crumbled feta, sliced strawberries, pumpkin seeds, and red onions. Lightly mix everything together.
- For serving, add salad to individual bowls, drizzle with bacon vinaigrette as needed, and season to taste.
