
Southwest Green Bean Casserole

Ingredients
- 4 Hill Country Fare Sliced Bacon
- 1 White onion(s), diced
- 1 tbsp H-E-B Peeled Garlic Cloves, minced
- 1 tbsp H-E-B Select Ingredients Extra Virgin Olive Oil
- 1 lb Mushrooms, sliced
- 1 tbsp H-E-B Oregano
- 1/8 tsp Salt
- 1/8 tsp H-E-B Pure Ground Black Pepper
- 1 cup H-E-B Heavy Whipping Cream
- 1 cup H-E-B Select Ingredients Reduced Fat Monterey Jack Cheese, Shredded
- 32 oz H-E-B Select Green Beans
- 6 oz Blue Diamond Almonds Bold Lime 'n Chili
Instructions
- Heat oven to 400°F.
- Coat 9 x 13-inch casserole dish with non-stick cooking spray.
- In large skillet, sauté bacon until crisp and remove from pan.
- Add onion and garlic to bacon drippings. Drizzle olive oil and cook on low heat for 5 minutes, or until soft.
- Add mushrooms to pan. Season with oregano, salt and pepper. Cook for 8 minutes, or until soft.
- Add heavy cream and 1/2 cup cheese. Cook for 5 minutes. Add green beans and stir.
- Place mixture in casserole dish. Top with bacon and almonds and remaining cheese.
- Bake for 20 minutes or until cheese bubbles.
