
Skillet Roasted Chicken Cacciatore

Ingredients
- 3 lb Boneless, skinless chicken thighs
- 2 tbsp Olive oil, divided use
- 8 oz Sliced mushrooms
- 1 cup White onion, thinly sliced
- 1 cup Red bell pepper, thinly sliced
- 0.5 oz Fresh rosemary sprigs
- 10 oz Tuscan Tomato Pan Sauce
Instructions
- Preheat oven to 350ºF. Heat a large, oven-safe skillet over medium-high heat. Season chicken thighs with salt, pepper or all purpose seasoning.
- Add 1 Tbsp. of oil and chicken to pan. Sear each sides just until golden then transfer to a plate (chicken will not be fully cooked yet).
- Add remaining oil to the pan along with mushrooms, onions, bell peppers and rosemary. Stir and cook until onions are soft. Add pan sauce and stir to combine.
- Nestle chicken in onion mixture and cook uncovered for 15 to 17 minutes or to an internal temperature of 165º.
- Chef's note: Serve over cooked pasta or with crusty bread.
