Unsaved Skillet Roasted Chicken Cacciatore

Ingredients

  • 3 lb Boneless, skinless chicken thighs
  • 2 tbsp Olive oil, divided use
  • 8 oz Sliced mushrooms
  • 1 cup White onion, thinly sliced
  • 1 cup Red bell pepper, thinly sliced
  • 0.5 oz Fresh rosemary sprigs
  • 10 oz Tuscan Tomato Pan Sauce

Instructions

  1. Preheat oven to 350ºF. Heat a large, oven-safe skillet over medium-high heat. Season chicken thighs with salt, pepper or all purpose seasoning.
  2. Add 1 Tbsp. of oil and chicken to pan. Sear each sides just until golden then transfer to a plate (chicken will not be fully cooked yet).
  3. Add remaining oil to the pan along with mushrooms, onions, bell peppers and rosemary. Stir and cook until onions are soft. Add pan sauce and stir to combine.
  4. Nestle chicken in onion mixture and cook uncovered for 15 to 17 minutes or to an internal temperature of 165º.
  5. Chef's note: Serve over cooked pasta or with crusty bread.
