Unsaved Sicilian-Style Antipasto Salad

Ingredients

  • 1/2 cup(s) extra virgin olive oil
  • 1/4 cup(s) red wine vinegar
  • 1 tbsp Dijon mustard
  • 2 tsp dried oregano, plus more as needed to taste
  • 1 each head of iceberg lettuce, washed, core removed, & roughly chopped
  • 3 oz Soppressata, Diced or cubed, plus more as needed
  • 1 cup(s) fresh Mozzarella Ciliegine, liquid drained, plus more as needed
  • 1 cup(s) provolone cheese, (approximately 1/4 pound) diced into small cubes, plus more as needed
  • 4 3/5 oz quartered marinated artichoke hearts, drained of all liquid
  • 1 cup(s) whole roasted piquillo peppers, chopped or sliced, plus more as needed
  • 1 cup(s) Genoa salami, cubed or diced, plus more as needed
  • 1 cup(s) pitted Castelvetrano olives, drained of any liquid, plus more as needed
  • 1 cup(s) whole pepperoncinis, drained of any liquid plus more as needed
  • 1 cup(s) Italian Mix Giardiniera, Mild, drained of all juice, plus more as needed
  • 1 cup(s) fresh basil leaves, loosely packed and hand torn to garnish

Instructions

  1. For dressing salad, mix together olive oil, red wine vinegar, mustard and oregano and whisk to just combine. Set aside.
  2. Place iceberg lettuce in a large bowl. Strategically place each ingredient in stripes over the lettuce to form uniform rows.
  3. Drizzle dressing over salad as needed for serving. Season to taste.
