
Sicilian Olive, Artichoke and Lemon Pasta

Serves 6
Ingredients
- 16 oz Casarecce or penne pasta
- 1/4 cup Extra virgin olive oil
- 1 tbsp Fresh garlic cloves, minced
- 1/2 tsp Crushed red pepper, plus more or less for desired heat level
- 4.5 oz Castelvetrano olives, liquid drained and roughly chopped
- 14.6 oz Canned quartered artichokes, liquid drained
- 1/2 tbsp Fresh lemon zest, approximately 1 small lemon, zested
- 1/2 cup Fresh Parmesan cheese, grated or shredded, plus more as needed
- 1/4 cup Fresh parsley, roughly chopped as needed to garnish
Instructions
- Bring a large pot of water to a boil with a generous pinch of salt. Cook pasta according to package instructions, drain (reserving 1 cup of pasta cooking water for sauce) and set aside.
- Set a large sauté pan over medium heat and add olive oil, garlic and crushed red pepper flakes. Stir fry until garlic is just fragrant, approximately 1 to 2 minutes.
- Add olives, artichokes and cooked pasta, toss to combine then add reserved pasta water, lemon zest and Parmesan cheese.
- Toss pasta to coat and cook until creamy and bubbly.
- Remove from heat and add chopped parsley to garnish and more Parmesan as needed. Season to taste.
