
Shrimp Scampi and Parmesan Grits

- 2 cup(s) whole milk
- 2 cup(s) water
- 1 tsp sea salt
- 1/2 tsp cayenne pepper
- 1 cup(s) grits (also called polenta)
- 1/2 cup(s) grated Parmesan cheese
- 2 tbsp salted butter
- 1 tbsp fresh garlic, finely minced
- 1 1/2 tbsp Adams Reserve Roasted Garlic and Herb Seasoning
- 1 1/2 lb peeled, deveined shrimp, 16/20 per pound
- 2 medium Roma tomatoes, diced
- 1 medium lemon, zest and juice
Instructions
- Add milk, water, salt and cayenne to a saucepan. Bring to a simmer.
- Add grits, stir to combine and cook according to package directions. When grits are tender, add Parmesan cheese. Stir through and keep covered while cooking shrimp.
- Place a large skillet over medium-high heat. When hot, add butter, fresh garlic and seasoning. Stir just until butter melts and starts to bubble.
- Add shrimp, tomatoes, lemon zest and juice. Stir and cook for 3 to 4 minutes or until shrimp are pink and just cooked through. Season to taste with salt and pepper. Remove from heat.
- Divide grits between serving bowls and top with shrimp and sauce.
- Chef's note: Garnish with fresh parsley if desired.
