Unsaved Shrimp Scampi and Parmesan Grits

Ingredients

  • 2 cup(s) whole milk
  • 2 cup(s) water
  • 1 tsp sea salt
  • 1/2 tsp cayenne pepper
  • 1 cup(s) grits (also called polenta)
  • 1/2 cup(s) grated Parmesan cheese
  • 2 tbsp salted butter
  • 1 tbsp fresh garlic, finely minced
  • 1 1/2 tbsp Adams Reserve Roasted Garlic and Herb Seasoning
  • 1 1/2 lb peeled, deveined shrimp, 16/20 per pound
  • 2 medium Roma tomatoes, diced
  • 1 medium lemon, zest and juice

Instructions

  1. Add milk, water, salt and cayenne to a saucepan. Bring to a simmer.
  2. Add grits, stir to combine and cook according to package directions. When grits are tender, add Parmesan cheese. Stir through and keep covered while cooking shrimp.
  3. Place a large skillet over medium-high heat. When hot, add butter, fresh garlic and seasoning. Stir just until butter melts and starts to bubble.
  4. Add shrimp, tomatoes, lemon zest and juice. Stir and cook for 3 to 4 minutes or until shrimp are pink and just cooked through. Season to taste with salt and pepper. Remove from heat.
  5. Divide grits between serving bowls and top with shrimp and sauce.
  6. Chef's note: Garnish with fresh parsley if desired.
