
Shrimp Moqueca

Ingredients
- 2 tbsp Avocado oil
- 1 tbsp Garlic, minced
- 1 Medium red onion, julienned
- 1 Large red bell pepper, stem, seeds, and ribs removed, julienned
- 3 Small birds Eye Peppers, stem removed, minced
- 4 Medium roma tomatoes, seeds removed, julienned
- 2 Medium russet potatoes, peeled and medium diced
- 1 tsp Ground cumin
- 1 1/2 tsp Salt
- 2 cups Chicken broth
- 1 tsp Smoked paprika
- 2 lb Shrimp, peeled and deveined
- 13.5 oz Coconut milk
- 1/2 cup Cilantro, minced
Instructions
- Place a medium pot or high-sided skillet over medium-high heat and add oil. When oil is hot, add garlic, onions, red bell peppers, and Bird's Eye Peppers, and cook for 2 minutes.
- Add tomatoes, potatoes, salt, cumin, and paprika. Stir to combine then add chicken broth and bring to a simmer. Cook 4 minutes until the potatoes begin to soften.
- Add shrimp and coconut milk, and stir gently. Cover and cook until potatoes are fork tender (about 5 to 6 minutes) and shrimp are cooked through. Sprinkle cilantro over top and serve.
