
Sheet Pan Roasted Butternut Squash Curry Soup

Ingredients
Serves 8
- 3 lb butternut squash, approximately 3 lbs or 1 medium squash, seeds scrapped out
- 1 medium red onion, peeled and cut into large dice
- 6 large cloves of garlic, whole cloves crushed
- 2 large carrots, peeled, root removed, cut into chunks
- 1/4 cup(s) extra virgin olive oil
- 3 cup(s) vegetable broth
- 13 2/3 oz unsweetened coconut milk
- 2 tbsp spicy curry powder
- 1/2 cup(s) fresh cilantro, chopped fine
Instructions
- Preheat oven to 375ºF.
- Line a sheet pan with parchment paper. Place squash cut-side down in center of pan.
- Arrange red onion, garlic and carrots around squash. Drizzle liberally with olive oil then season with a generous pinch of salt and pepper.
- Roast approximately 45 minutes or until squash is very tender when pierced with a toothpick or knife and veggies are nicely caramelized.
- Remove from oven and cool slightly.
- Scoop out butternut squash meat and discard skin. Add squash, all other roasted veggies, broth, coconut milk, and curry powder to a blender.
- Puree until smooth then pour into a soup pot. Bring to a simmer over medium heat.
- Remove from heat, add cilantro and season to taste with salt and pepper. Garnish with yogurt and more fresh cilantro for serving if desired.
