Ingredients

Serves 4

  • 4 each Higher Harvest by HEB Low carb seeded bread, plus more as needed
  • 1/4 cup(s) extra virgin olive oil, as needed for drizzling over bread
  • 2 each peeled garlic cloves, as needed for rubbing on bread
  • 2 large haas avocados, pits removed and avocados cut into quarters, plus more as needed
  • 1 tbsp Everything bagel spice smoky jalapeno, or as needed
  • 1/3 cup(s) pecorino romano cheese, grated, as needed
  • 1/2 cup(s) micro greens, as needed to garnish

Instructions

  1. Preheat oven to 375°F
  2. Place 4 slices of bread onto a sheet pan lined with parchment paper. Drizzle each slice with a little olive oil and sprinkle with a pinch of salt.
  3. Bake for 12 to 15 minutes or until bread is nicely toasted. Remove from oven and while still hot carefully rub tops of each toast with garlic cloves.
  4. Let toast cool completely after rubbing with garlic before proceeding with recipe.
  5. To build toasts, mash half an avocado on each slice of bread sprinkle with bagel spice, top with pecorino Romano cheese and micro greens.
  6. Chef's Note: You can also top your avocado toast with crumbled bacon, or smoked salmon and any fresh herbs or lemon zest.
