
Seared Salmon with Pickled Veracruz Style Salsa

Ingredients
- 1/4 cup Capers, drained and rinsed
- 1/2 cup Castelvetrano Green Olives, roughly chopped
- 1/2 cup Fresh roma tomatoes, seeds removed and diced small
- 2 Garlic cloves, approximately .3 oz., very thinly sliced (mandolin is recommended)
- 1/4 cup Red bell pepper, minced or diced very small
- 2 tbsp Shallots, minced or diced very fine
- 2 tbsp Fresh Dill, finely chopped
- 2 tbsp Fresh Mint, finely chopped
- 2 tbsp Fresh lime juice
- 2 tbsp Fresh lemon juice
- 12 oz Fresh Atlantic salmon filets, approximately (2) 6 ounce portions
- 1/2 tsp Ground Cumin, plus more as needed for seasoning
- 2 tbsp Extra Virgin Olive Oil, as needed for brushing over salmon fillets
Instructions
- Place capers in a bowl along with olives, tomatoes, garlic, red pepper, shallots, dill, mint, and a pinch of salt and pepper. Toss well to blend.
- Add lime and lemon juices to mixture and toss again. Season to taste and refrigerate for at least 30 minutes to allow flavors to meld and soften.
- Heat a medium to large non-stick skillet over medium heat.
- Meanwhile, season salmon liberally with salt, pepper, and cumin. Set aside at room temperature while pan is heating.
- When pan is hot, brush salmon with oil then place flesh-side down, skin-side up in pan. Cook approximately 4 to 6 minutes.
- Once salmon has a nice crust, flip and continue to cook until internal temperature of salmon reaches at least 150ºF.
- Remove salmon to a serving plate and allow to rest for at least 5 to 10 minutes. Serve salsa over salmon as needed. Season to taste.
