Seafood Topado

Unsaved Seafood Topado

Ingredients

  • 1 tbsp Avocado oil
  • 2 tsp Garlic, minced
  • 1 tbsp Jalapeño pepper, seeds removed, small dice
  • 1/2 Medium red bell pepper, stem, seeds, and ribs removed, julienned
  • 1/2 Medium onion, julienned
  • 2 Medium roma tomatoes, seeds removed, medium dice
  • 2 Medium plantains, peeled and medium dice
  • 1/2 tsp Achiote paste
  • 1 1/2 cups Chicken broth
  • 13.5 oz Coconut milk
  • 1 lb Shrimp, peeled and deveined
  • 3 Pangasius fillets
  • 2 tsp Salt
  • 1/4 cup Cilantro, roughly chopped

Instructions

  1. Heat a large pot over medium-high heat and add oil. When oil is hot, add garlic, jalapeño, bell pepper, and onion. Cook for 2 minutes or until vegetables begin to soften.
  2. Add tomatoes, plantains, and achiote, stir to combine and cook for 1 minute. Stir in chicken broth and coconut milk, bring to a simmer and cook for 5 minutes.
  3. Add shrimp and fish fillets to pot and season with salt. Cover, reduce heat to medium and cook for 10 minutes or until fish is cooked through.
  4. Remove lid and sprinkle with cilantro. Serve immediately.
