
Seafood Topado

Ingredients
- 1 tbsp Avocado oil
- 2 tsp Garlic, minced
- 1 tbsp Jalapeño pepper, seeds removed, small dice
- 1/2 Medium red bell pepper, stem, seeds, and ribs removed, julienned
- 1/2 Medium onion, julienned
- 2 Medium roma tomatoes, seeds removed, medium dice
- 2 Medium plantains, peeled and medium dice
- 1/2 tsp Achiote paste
- 1 1/2 cups Chicken broth
- 13.5 oz Coconut milk
- 1 lb Shrimp, peeled and deveined
- 3 Pangasius fillets
- 2 tsp Salt
- 1/4 cup Cilantro, roughly chopped
Instructions
- Heat a large pot over medium-high heat and add oil. When oil is hot, add garlic, jalapeño, bell pepper, and onion. Cook for 2 minutes or until vegetables begin to soften.
- Add tomatoes, plantains, and achiote, stir to combine and cook for 1 minute. Stir in chicken broth and coconut milk, bring to a simmer and cook for 5 minutes.
- Add shrimp and fish fillets to pot and season with salt. Cover, reduce heat to medium and cook for 10 minutes or until fish is cooked through.
- Remove lid and sprinkle with cilantro. Serve immediately.
