Unsaved Salt Slab Roasted Beef Tenderloin

Ingredients

  • 1 The Real Co Himalayan Salt Cooking Slab
  • 2 tbsp Rustico di Casa Asaro Unfiltered Extra Virgin Olive Oil
  • 4 lb H-E-B Natural Beef Tenderloin, trimmed
  • 1 cup Orti Di Calabria Green Peppercorn Sauce, plus more as needed for saucing
  • 3 tbsp Plugra European Style Unsalted Butter

Instructions

  1. Place salt slab on a sheet pan and set in oven. Then preheat oven to 400ºF.
  2. Allow salt slab to slowly come to temperature, approximately 30 to 45 minutes.
  3. Brush or drizzle olive oil over tenderloin and season liberally with cracked black pepper.
  4. Place tenderloin on salt slab. If it's too large, simply cut tenderloin in half or place on an angle to allow as much contact with slab as possible.
  5. Roast tenderloin for 30 to 40 minutes, rotating meat every 10 to 15 minutes so salt slab evenly seasons meat.
  6. Once beef is cooked to desired internal temperature, remove from oven and remove from salt block in order for steak to rest.
  7. While steak rests, place green peppercorn sauce into a small saucepan and bring to a simmer. Add butter and whisk.
  8. Slice meat and drizzle sauce as needed. Season to taste.
  9. Chef's Note: When removing salt slab from oven, be careful to remove meat to a cutting board as it will continue to cook as long it sits on the salt slab. Clean and store salt slab according to package instructions.
