Ingredients

  • 15 oz whole milk ricotta
  • 2/3 cup(s) Crema Agria Mexican-Style Sour Cream
  • 2 each limes, juiced and zested
  • 1/4 cup(s) grated cotija cheese
  • 1 each cabbage, outer leaves removed
  • 3 tbsp avocado oil or grapeseed oil
  • 1 cup(s) vegetable stock
  • 4 tbsp butter
  • 1 tsp kosher salt
  • 2 1/2 tbsp Patricia Quintana Salsa Macha - Pumpkin Seed

Instructions

  1. In a blender or food processor, combine ricotta, Mexican crema, lime juice, and grated cotija. Process until smooth. Transfer to a bowl and set aside.
  2. Meanwhile, heat a large cast iron pan over high heat. Cut cabbage into 6 to 8 wedges ensuring the core remains intact on each wedge.
  3. When pan is hot, add oil and cabbage. Sear for 5 to 6 minutes until golden brown. Flip cabbage then add vegetable stock and cover. Turn heat down to medium and cook for an additional 5 to 7 minutes.
  4. Once cabbage is fork tender, remove from heat. Add butter, letting heat of the pan melt the butter. Spoon over the cabbage and sprinkle salt over the top to season.
  5. To serve, spread some ricotta mixture on the bottom of each plate. Top with a cabbage wedge and some of the pan sauce. Garnish with a healthy spoonful of salsa macha and some lime zest.
