Salmon with Salsa de Pacifico

Unsaved Salmon with Salsa de Pacifico

Ingredients

Serves 4

  • 2 tbsp SMP Rub Del Pacifico
  • 1/4 cup(s) shallots, minced
  • 1/4 cup(s) fresh cilantro, chopped fine or minced
  • 1 tbsp fresh jalapeños, minced fine, plus more as needed for spice
  • 2 tbsp capers, drained
  • 1/4 cup(s) fresh squeezed lime juice
  • 4 tbsp Calabrian chili spicy extra virgin olive oil, divided use, 1/2 for salsa half for searing salmon
  • 1 lb fresh Atlantic salmon portions, approximately 4 (4 oz.) fillets
  • 1 tbsp Adams Reserve Gunpowder House Rub, or as needed for seasoning fillets

Instructions

  1. In a small bowl combine wet rub, shallots, cilantro, jalapeños, capers, lime juice and 2 tbsp of olive oil. Mix well to incorporate and season to taste. Set aside.
  2. Season salmon liberally with gun powder seasoning and set aside. Place a large non-stick skillet over medium heat.
  3. Allow pan to get hot before adding remaining 2 tbsp of oil. Sear salmon flesh-side down, skin-side up for 6 to 8 minutes or until salmon develops a nice crust.
  4. Flip salmon and continue to cook skin-side down until salmon reaches an internal temperature of at least 150ºF.
  5. Allow salmon to rest for at least 5 minutes then serve salsa over each fillet as needed. Season to taste.
