
Sake Brined Turkey with Charred Plum Butter

Ingredients
- 1 Large turkey, 16 to 18 pounds
- 6 qt Sake Turkey Brine, recipe on heb.com
- 2 lb Plums, halved and pitted
- 1 tbsp H-E-B Select Ingredients Extra Virgin Olive Oil
- 8 tbsp H-E-B Select Ingredients Sweet Cream Salted Butter
- 1/4 cup Shallot(s), very finely chopped
- 3 tbsp H-E-B Organics Grade A Medium Amber Maple Syrup
- 1 tbsp Orange zest, freshly grated
- 2 tsp H-E-B Select Ingredients Dijon Mustard
- 1/2 tsp Liquid smoke
Instructions
- Thaw turkey completely in refrigerator. Place in a deep container and cover with brine. Keep refrigerated for 18 to 24 hours.
- Remove from brine and dry skin well with paper towels. Rub skin with a light coating of salt and return to refrigerator for 2 to 3 hours, or overnight to dry out skin.
- Coat plums with a light drizzle of olive oil. Heat grill to medium. Grill plums just long enough to develop a char on both sides of plums. Set aside.
- Add butter to a saucepan. Melt over medium heat and brown in pan. Add shallots and cook for 4 to 5 minutes, or until they begin to soften.
- Add charred plums, maple syrup, orange zest, Dijon mustard and liquid smoke. Stir and simmer until plums become very soft and break apart. Adjust seasoning with salt and pepper to taste.
- Preheat oven to 325ºF. Rub turkey with olive oil then place on a rack in a roasting pan in the lower part of oven for 2 1/2 hours for an 16 pound bird.
- Baste turkey with plum sauce about every 20 minutes for another hour (until internal temperature reaches 165ºF on a meat thermometer inserted into thigh). Remove from oven and let sit 15 minutes before carving.
