Rosemary Pan Roasted Ribeyes

Unsaved Rosemary Pan Roasted Ribeyes

Ingredients

  • 2 Medium ribeye steaks, about 1 inch thick
  • 1 tbsp Avocado oil
  • 1 tsp H‑E‑B Texas Prime Coarse Seasoning
  • 2 Fresh rosemary
  • 2 tbsp Roasted Garlic & Herb Finishing Butter
  • 2 tbsp Shallots, finely diced

Instructions

  1. Rub steaks on both side with half of oil and all of seasoning. Let sit at room temperature for 15 minutes.
  2. Heat a empty, heavy skillet over medium heat for 5 minutes (not a non-stick pan, cast iron works great for this). Pan will be very hot.
  3. Add remaining oil to pan and place steaks in pan. Sear well on first side for 5 minutes, turn over.
  4. Add rosemary sprigs to outside edge of pan. Cook steaks for 2 minutes then add butter to pan. Using a hot pad, tilt pan slightly to collect melted butter in a large spoon and baste steak while continuing to cook an additional 2 to 3 minutes, or to desired doneness.
  5. Remove steaks to a plate, cover lightly with foil to keep warm.
  6. Add shallots to pan. Stir and cook shallots for 3 to 4 minutes while steak are resting. Deglaze pan with 1 tablespoon of water to scrape up any brown bits left behind. Spoon remaining pan juices and shallots over steaks. Serve immediately
