Unsaved Rojo Pork Mac and Cheese

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground pork
  • 1/4 cup(s) SMP Rub Rojo Wet Seasoning
  • 1 cup(s) white onions, finely chopped
  • 10 oz can diced tomatoes with green chilies, drained
  • 32 oz chicken broth
  • 1/2 cup(s) half & half
  • 11 oz dry elbow macaroni pasta, (or other dry pasta shape as desired)
  • 8 oz cream cheese, cut into cubes
  • 8 oz Mi Tienda Queso Quesadilla, shredded
  • 1/4 cup(s) fresh cilantro leaves, chopped

Instructions

  1. Heat a large pot over medium high heat. Add oil and pork. Break apart meat and cook for 3 to 4 minutes.
  2. Add rojo wet rub and onions to pan. Cook 4 to 5 more minutes, or until onions start to soften. Stir in tomatoes & green chilies, chicken broth, and half & half. Bring to a simmer.
  3. Add pasta and stir to combine. Cook for 10 to 12 minutes or until past begins to soften.
  4. Turn heat to low and add cream cheese and shredded cheese. Stir to combine and simmer just long enough to melt cheese. Stir through cilantro (if using) and serve.
