
Rojo Pork Mac and Cheese

Ingredients
Serves 8
- 1 tbsp olive oil
- 1 lb ground pork
- 1/4 cup(s) SMP Rub Rojo Wet Seasoning
- 1 cup(s) white onions, finely chopped
- 10 oz can diced tomatoes with green chilies, drained
- 32 oz chicken broth
- 1/2 cup(s) half & half
- 11 oz dry elbow macaroni pasta, (or other dry pasta shape as desired)
- 8 oz cream cheese, cut into cubes
- 8 oz Mi Tienda Queso Quesadilla, shredded
- 1/4 cup(s) fresh cilantro leaves, chopped
Instructions
- Heat a large pot over medium high heat. Add oil and pork. Break apart meat and cook for 3 to 4 minutes.
- Add rojo wet rub and onions to pan. Cook 4 to 5 more minutes, or until onions start to soften. Stir in tomatoes & green chilies, chicken broth, and half & half. Bring to a simmer.
- Add pasta and stir to combine. Cook for 10 to 12 minutes or until past begins to soften.
- Turn heat to low and add cream cheese and shredded cheese. Stir to combine and simmer just long enough to melt cheese. Stir through cilantro (if using) and serve.
