Unsaved Roasted Poblano Sheetpan Nachos with Manchego and Chorizo

Ingredients

  • 7 oz Roasted poblano thin potato chips, or your favorite thin potato chips
  • 1 cup Uncured chorizo, diced or minced into small pieces
  • 2 cups 6 month aged Manchego cheese, shredded or grated
  • 2 cups Shredded mozzarella
  • 1/2 cup Green onions, chopped
  • 2 tbsp Hot honey, or as needed for drizzling

Instructions

  1. Preheat oven to 350ºF.
  2. Cover a sheet pan with non-stick foil then pour entire bag of chips evenly over pan. Evenly spread chorizo over chips.
  3. Sprinkle both cheeses over chips and chorizo to just cover. Bake 8 to 12 minutes or until cheese is just melted and bubbly.
  4. Once cooked, remove from oven and garnish with green onions and drizzle a little honey over chips while still hot. Serve immediately!
