Roasted Mushroom Tostadas

Unsaved Roasted Mushroom Tostadas

Ingredients

  • 4 each low carb flour tortillas, plus more as needed
  • 16 oz Baby bella mushrooms
  • 1 tbsp garlic cloves, minced fine or zested
  • 1 tsp ground cumin
  • 1/3 cup(s) fresh cilantro, chopped fine
  • 1 tbsp fresh thyme, leaves only, stems removed
  • 1/4 cup(s) extra virgin olive oil
  • 1 tbsp sherry vinegar
  • 1 cup(s) fresh guacamole, plus more as needed

Instructions

  1. Preheat oven to 375ºF. Line a baking sheet with parchment paper. Place tortillas on parchment paper, and bake for 8 to 12 minutes or until tortillas are just crisp and lightly toasted. Remove and set aside. Keep oven on for mushrooms.
  2. In a bowl add mushrooms, garlic, cumin, cilantro, thyme, olive oil, sherry vinegar and a generous pinch of salt and pepper, toss together to combine.
  3. Transfer to an oven safe 8" x 8" glass or ceramic dish and roast uncovered until mushrooms are nicely browned and roasted, about 25 to 30 minutes. Remove from oven and allow to cool slightly.
  4. To assemble, spread a little guacamole on a tostada then spoon mushroom mixture on top. Season to taste as desired.
  5. Repeat with any additional tostadas and garnish with your favorite hot sauce or condiments.
