Roasted Chicken and Sweet Potato Fiesta Bowl

Unsaved Roasted Chicken and Sweet Potato Fiesta Bowl

Ingredients

  • 1/2 cup Chopped Celery & Onion
  • 1 Large sweet potato, peeled and medium diced
  • 1 3/4 tsp Mi Tienda All Purpose Seasoning, divided use
  • 3 tbsp Extra Virgin Olive Oil, divided use
  • 2 Boneless Skinless Chicken Breasts
  • 14.5 oz Canned Black Beans, drained and rinsed
  • 3 cups Arugula
  • 1 Medium lime, juiced
  • 1/2 cup Pico De Gallo
  • 3/4 cup Carolina Reaper Shredded Cheese

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with foil.
  2. In a medium bowl combine onion and celery mix, sweet potatoes, 1/2 teaspoon of Mi Tienda All Purpose Seasoning, and 1 tablespoon of olive oil. Toss to coat then spread out on half the baking sheet.
  3. Place chicken breasts in a bowl, drizzle with 1 tablespoon of olive oil and sprinkle with 1 teaspoon of Mi Tienda All Purpose Seasoning. Lay on open half of baking sheet. Place in oven and roast for 30 minutes.
  4. Meanwhile, make arugula salad. Combine black beans with arugula, lime juice, pico de gallo, and remaining olive oil and seasoning. Toss then set aside.
  5. When chicken has reached an internal temperature of 165°F, remove from oven and let rest 5 minutes. Slice or dice chicken breasts as desired.
  6. Combine sweet potato mixture with arugula salad, stir and divide equally between 2 bowls. Top with chicken and garnish with cheese. Serve immediately.
