Roasted Brussels Sprouts, Apples, Celeriac and Radishes

Unsaved Roasted Brussels Sprouts, Apples, Celeriac and Radishes

Ingredients

  • 2 lb Brussels sprouts, bottoms trimmed and sprouts cut in half
  • 1 bunch Red radishes, tops trimmed and radishes cut into 2-3 vertical slices each
  • 1 Large apples, medium dice
  • 1 Large fresh celery root, diced
  • 2 tbsp Extra virgin olive oil
  • 1 tsp Kosher salt
  • 1 tbsp Ground black pepper
  • 1 tbsp Sherry vinegar

Instructions

  1. Pre-heat oven to 400˚F.
  2. In a large bowl combine brussel sprouts, radishes, apples and celeriac together. Toss with olive oil and salt and pepper, then place on a sheet pan and roast in oven for 35-45 minutes or until caramelized.
  3. Once veggies are caramelized remove them to a serving bowl, add in sherry vinegar and toss. Season to taste with salt and pepper.
