
Roasted Bruschetta Salmon

Ingredients
- 4 Salmon Portions
- 2 tbsp Olive oil
- 1 tsp House Blend Seasoning
- 3 Medium roma tomatoes, seeds removed, chopped
- 1 tsp Fresh garlic, minced
- 1 tbsp Fresh basil leaves, finely chopped
- 1/3 cup Balsamic reduction
Instructions
- Preheat oven to 400ºF. Line a rimmed baking sheet with foil. Set aside briefly. Gently rinse salmon filets under cool water and pat dry wit a paper towel.
- Gently rinse salmon filets under cool water. Pat dry with a paper towel.
- Place salmon on foil. Drizzle lightly with olive oil and House blend seasoning or seasoning of your choice. Roast salmon in oven for 15 to 18 minutes or to an internal temperature of 145ºF.
- While salmon is cooking, place tomatoes in a bowl and add garlic, basil and balsamic vinegar. Adjust seasoning with salt and pepper and stir gently to combine.
- Remove salmon from oven and spoon bruschetta mixture over roasted salmon. Serve immediately.
