Ingredients

  • 12 oz Fresh Black-eyed Peas, in produce
  • 3 cup(s) Low Sodium Vegetable Broth
  • 1 tbsp Kosher Salt, use half amount if using iodized table salt
  • 1 tsp Ground Cumin
  • 1/2 tsp Granulated Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Mediterranean Oregano
  • 1 tsp Onion Powder
  • 1 tbsp Red Wine Vinegar
  • 2 tbsp Extra Virgin Olive Oil

Instructions

  1. In a large pot with a tight-fitting lid, add blackeyed peas, vegetable broth, and salt. Bring to a rapid boil then cover and turn heat down to low.
  2. Cook beans for about 50 minutes or until just tender but not mushy or overcooked. Drain well and spread out on a sheet pan to cool.
  3. Preheat oven to 375°F.
  4. In a bowl, combine cooled blackeyed peas, cumin, garlic powder, smoked paprika, oregano, onion powder, red wine vinegar, and olive oil.
  5. Toss to coat and season to taste with salt and pepper if needed.
  6. Wrap a sheet pan with foil then spread blackeyed peas out on the pan. Roast 30 minutes or until lightly browned. Turn off oven and leave peas in oven for an additional 30 minutes.
  7. Remove from oven and set aside until beans are cooled completely. Beans will dry out further as they cool. Place in a bowl and serve.
