
Red Snapper Picatta

Ingredients
- 1 Large lemon, sliced very thin
- 1 lb Red snapper, gently rinsed and patted dry with a paper towel
- 1 tbsp Extra virgin olive oil
- 1/4 cup Dry white wine
- 1 tbsp Adams Reserve Buttery House Seasoning
- 8 cloves Fresh garlic, thinly sliced or minced
- 1 tbsp Capers, drained
Instructions
- Preheat oven to 375º. Place a large piece of parchment paper or foil on a rimmed baking sheet. Arrange 5 or 6 lemon slices in a line in the middle of the parchment (about the same length as the fish). Lay snapper on top of lemon slices.
- Drizzle with olive oil and white wine. Season liberally with Adams reserve seasoning then lay garlic slices on top. Add remaining lemon slices and scatter capers over the fish.
- Close up parchment (or foil) and seal loosely. Place in oven and cook for 16 to 18 minutes or until fish is white all the way through. Open parchment carefully to avoid being burned by steam.
