- 2 lb red potatoes, cubed
- 1/4 cup(s) salted butter
- 1/2 cup(s) Reduced Fat 2% Milk
- 1/4 cup(s) non-fat plain Greek yogurt
- 1/8 tsp kosher salt
- 1/8 tsp ground black pepper
Instructions
- Bring a large pot of water to boil. Add a pinch of salt and potatoes. Cook 10 minutes or until tender, but still firm. Drain potatoes.
- Mix butter, skim milk, and yogurt; combine with potatoes.
- Mash together until smooth and creamy. Add salt and pepper to taste. Optional: Add chopped chives for color and flavor.
