Unsaved Red Mashed Potatoes with Greek Yogurt

Ingredients

  • 2 lb Red potatoes, cubed
  • 1/4 cup Salted butter
  • 1/2 cup Reduced Fat 2% Milk
  • 1/4 cup Non-fat plain Greek yogurt
  • 1/8 tsp Ground black pepper
  • 1/8 tsp Kosher salt

Instructions

  1. Bring a large pot of water to boil. Add a pinch of salt and potatoes. Cook 10 minutes or until tender, but still firm. Drain potatoes.
  2. Mix butter, skim milk, and yogurt; combine with potatoes.
  3. Mash together until smooth and creamy. Add salt and pepper to taste. Optional: Add chopped chives for color and flavor.
