Unsaved Ranch Burritos with Greek Yogurt

Ingredients

  • 24 oz Higher Harvest by H‑E‑B Frozen Gluten Free Chicken Nuggets
  • 1 cup(s) Monterey Jack cheese, plus more as needed
  • 1 cup(s) shredded lettuce, or as needed
  • 2 1/2 oz bacon bits, plus more as needed
  • 1/3 cup(s) diced jalapeños, or as needed for spice
  • 1/2 cup(s) green onions, diced small
  • 1 cup(s) Greek yogurt plain
  • 1 tbsp ranch salad dressing, or as needed for seasoning mixture
  • 6 each H‑E‑B Pre-Cooked Ready to Heat Flour Tortillas, or as needed

Instructions

  1. Preheat oven to 425ºF. Line a sheet pan with parchment paper and set aside.
  2. Arrange chicken nuggets on prepared pan. Bake according to package instructions. Cool slightly before roughly chopping.
  3. In a bowl combine chicken nuggets, cheese, lettuce, bacon, jalapeños, green onions, Greek yogurt and ranch seasoning.
  4. Toss well to combine, season with more ranch powder as needed. Place a large non-stick skillet over medium heat.
  5. To build burritos, place a spoonful of mixture in the center of each tortilla. Roll up and tuck in ends to form a burrito. Repeat with remaining ingredients.
  6. Place burritos seam-side down in hot skillet and allow to get crispy and brown before flipping.
  7. Roll and cook burritos on all sides pressing gently until all sides are crispy. Repeat with additional burritos.
  8. Serve with your favorite condiments as needed.
