Ingredients
Serves 3
- 1 tbsp extra virgin olive oil
- 3 1/3 oz meatless crumbles southwest seasoned
- 9 oz Chopped Romaine
- 2 cup(s) shredded cabbage
- 1/2 cup(s) Colby Jack cheese, shredded, plus more as needed
- 1/3 cup(s) grape tomatoes, sliced in half
- 1/4 cup(s) green onion, diced
- 1/2 cup(s) avocado, diced into chunks
- 1/3 cup(s) tomatillo salsa, or as needed for dressing
Instructions
- Add oil to a sauté pan and follow package instructions for rehydrating and cooking crumbles. Remove from heat and allow to cool slightly.
- While meat cools combine lettuce, cabbage, cheese, tomatoes, green onions and avocado together in a serving bowl.
- Add meatless crumbles and salsa, toss gently and season to taste.
- Chef's Note: Customize your add-ins to your tastes. Pepitas add a nice crunch to garnish.
