Unsaved Quick Pecan Peach Cobbler

  • 8 oz Vicky Cakes Pecan Pancake & Waffle Mix, whole bag
  • 1/2 cup(s) brown sugar
  • 1/2 cup(s) salted butter, melted
  • 2 tsp vanilla extract
  • 29 oz Hill Country Fare Peach Slices in Heavy Syrup, drained

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, combine pancake mix, brown sugar, melted butter, and vanilla extract. Mix until butter is absorbed and a loose dough forms, similar to a streusel topping.
  3. Arrange drained peaches evenly in an 8x8 inch or 2 quart oven safe casserole dish. Crumble topping evenly over peaches to fully cover and gently press topping into peaches.
  4. Bake 25 to 30 minutes or until topping is golden brown. Remove from oven and cool completely before serving. Top with ice cream or whipped cream to serve!
