
Pumpkin Truffle Girasoli with Rosemary Bruschetta

Ingredients
Serves 2
- 1 each 8.8 oz container of Pumpkin Truffle Girasoli
- 2 tbsp extra virgin olive oil
- 1/2 tsp red chili flakes, (adjust amount to taste)
- 1 1/2 tsp fresh rosemary leaves, very finely chopped
- 1 1/2 tsp fresh garlic, finely minced
- 3 small Roma tomatoes, seeded and chopped
- 1/4 cup(s) Pecorino Romano cheese, grated (can substitute parmesan)
Instructions
- Heat water to a boil and cook pasta according to package directions.
- Heat a large skillet over medium heat. Add olive oil, pepper flakes and rosemary to skillet. Heat just for 1 to 2 to 3 minutes, or until oil is heated through and begins to smell like rosemary. Reduce heat to low. Add garlic and tomatoes and stir to combine. Season to taste with salt and pepper.
- Drain pasta and add to tomato mixture. Toss gently to coat pasta. Top with grated cheese and serve warm.
