
Pumpkin Truffle Girasoli with Mushroom and Sage

Ingredients
Serves 2
- 1 each 8.8 oz container of Pumpkin Truffle Girasoli
- 2 tbsp extra virgin olive oil
- 8 oz baby bella mushrooms, sliced
- 1 1/2 tsp fresh garlic, minced
- 1 tbsp fresh sage leaves, very thinly sliced
- 1 1/2 tsp fresh lemon zest
- 1 oz baby arugula
- 1/4 cup(s) Pecorino Romano Cheese, grated (can substitute parmesan)
Instructions
- Heat water to a boil and cook pasta according to package directions.
- Heat a large skillet over medium-high heat. Add olive oil and mushrooms and cook and stir 4 to 5 minutes or until mushrooms start to brown.
- Reduce heat to low and add garlic, sage, lemon zest and arugula. Stir to combine and lightly wilt arugula. Season with salt and pepper to taste.
- Drain pasta and add to mushroom mixture. Toss gently to coat pasta. Top with grated cheese and serve warm.
