
Pumpkin Spiced Oats with Cranberries and Ricotta

Ingredients
- 1 1/2 cups Steel cut oats
- 15 oz Canned pumpkin
- 1 tsp Pumpkin pie spice
- 3 cups Unsweetend almond milk
- 3 tbsp Maple syrup, divide use
- 1 tsp Large navel orange, zest
- 1 cup Ricotta cheese
- 1/4 cup Dried sweetened cranberries
Instructions
- In a medium sized sauce pan, combine oats, pumpkin, pumpkin spice, almond milk, and 2 tablespoons maple syrup.
- Bring mixture to a boil stirring constantly, then reduce heat to a low simmer and cook for 30 minutes stirring occasionally.
- Combine remaining tablespoon of maple syrup, and orange zest with the ricotta.
- Serve a warm bowl of oats with a heaping dollop of spiced ricotta and some cranberries.
