
Pumpkin Carbonara

Ingredients
- 1 lb H-E-B Select Ingredients 100% Whole Wheat Spaghetti Pasta
- 1/2 cup Central Market Natural Uncured Black Pepper Bacon, diced
- 15 oz H-E-B Organics Solid Pack Pumpkin
- 1 cup H-E-B Heavy Whipping Cream
- 2 H-E-B Grade AA Cage Free Large White Eggs, yolks
- 1/4 tsp McCormick Pumpkin Pie Spice
- 1/4 cup H-E-B Select Ingredients Parmesan Fresh Grated Cheese
- 1 tbsp Fresh garlic clove(s), minced
- 1 tbsp Shallot(s), minced
- 2 tbsp Patty's Herb Sage, chopped
Instructions
- Bring a large pot of salted water to a boil and cook spaghetti according to package directions. Drain.
- Place a large sauté pan over medium-high heat and cook bacon, stirring occasionally, until golden brown and fat has been rendered, about 5 minutes.
- While bacon is rendering, whisk together pumpkin, heavy cream, egg yolks, pumpkin pie spice and Parmesan cheese. Set aside.
- Remove bacon from pan and drain on paper towels.
- Place garlic and shallots in same pan and cook about 1 to 2 minutes.
- Add cooked pasta and bacon back to pan and toss or stir well to mix thoroughly.
- Stir in pumpkin mixture and mix well. Season with salt and pepper, heat through and garnish with sage.
