
Puerto Rican Mofongo con Puerco

Ingredients
Serves 6
- 1 each Pork Tenderloin, cut into 1.5 inch cubes
- 1/2 tbsp Mi Tienda All Purpose Rub
- 2 tbsp All Purpose Flour
- 5 medium Garlic cloves
- 2 cup(s) Vegetable Oil
- 4 medium Green Plantains, ends removed, peeled, and cut in 1 inch pieces
- 3/4 cup(s) Mi Tienda Chicharrones, crushed
- 1/2 cup(s) Ferrer Chicken Broth
Instructions
- Season pork with Mi Tienda All Purpose Rub and add flour, then toss to coat. Set aside. Smash garlic and add to a large bowl.
- In a heavy-bottom deep pan or Dutch oven, heat vegetable oil to 350°F. Add plantains in a single layer and cook for 10-12 minutes, turning several times until golden brown and fork-tender. Remove with a slotted spoon to the bowl with garlic
- Add pork to the oil and cook for 3 minutes per side until browned and crispy on the outside.
- While pork is cooking, add Mi Tienda Chicharrones and Ferrer Chicken Broth to plantains. Mash with a potato masher or mortar until evenly combined and no large pieces remain.
- Remove pork from oil and place on a paper towel to drain. To serve, place the plantain mixture into a small bowl to form it, then unmold on a plate. Top with fried pork and serve immediately.
