
Power Pasta Salad made with Gluten Free Pasta

Ingredients
- 8 oz Yellow lentil pasta
- 1/3 cup Red onion, very finely diced
- 1 Small red bell pepper, finely diced
- 1 Medium seedless cucumber, 1/2 inch cubes
- 2 oz Baby spinach, roughly chopped
- 1/3 cup Fresh basil, finely chopped
- 1 lb Fully cooked chicken, roughly chopped
- 15 oz Canned garbanzo beans, drained and rinsed
- 2 Medium roma tomatoes, seeded and chopped
- 1/3 cup Kalamata olives, cut in half
- 2 oz Reduced fat feta cheese
- 1/2 cup Light balsamic vinaigrette
Instructions
- Heat a pot of salted water to a rolling boil then cook pasta 7 to 8 minutes or according to package directions. Drain and rinse with cool water to stop pasta from cooking. Drain and transfer pasta to a large bowl.
- While pasta is cooking, cut up onion, bell pepper, cucumber, spinach and basil and add to bowl with pasta. Add chicken, garbanzo beans, tomatoes, olives and feta cheese. Drizzle with dressing and toss gently to coat. Season with salt and pepper, to taste.
