
Power Kale Caesar Salad

Ingredients
Serves 4
- 1/4 cup(s) fresh squeezed lemon juice, plus 2 tablespoons for tossing with kale
- 1 cup(s) Higher Harvest Dairy-Free Plain Protein Yogurt
- 4 each cloves of garlic, lightly crushed
- 1 tbsp Dijon mustard
- 1 tbsp liquid aminos
- 3/4 cup(s) avocado oil, or any neutral flavored oil
- 12 oz Organic kale greens
- 1/3 cup(s) grated Parmesan cheese, plus more as needed for garnish
- 1 cup(s) prepared croutons, as needed for garnish
Instructions
- In a blender, add lemon juice, yogurt, garlic, mustard, and liquid aminos. Puree until smooth.
- With the blender running, slowly add oil in a thin stream until an emulsion forms. Season to taste with salt and lots of fresh cracked pepper, place in a container, and refrigerate until ready to use.
- When ready to serve, add kale to a large bowl along with 2 tablespoons of lemon juice and a pinch of salt. Using your hands, massage lemon juice into kale until softened and kale has shrunk by almost half its volume.
- Add dressing as needed as well as Parmesan and croutons. Season to taste and serve.
- Chef's Note: Store Caesar dressing in the refrigerator for up to 3 days.
