
Post Oak Smoked Turkey Pot Pie

Ingredients
Serves 6
- 2 each Frozen Deep Dish Pie Crust
- 12 oz Post Oak Smoked Turkey Breast, Sliced on # 10 in Deli, then cut into 1/2 inch cubes
- 8 1/2 oz Canned Peas, Drained
- 1 1/2 cup(s) Trinity Vegetable Blend
- 3 1/2 oz Diced Carrots
- 2 medium Garlic Cloves, Minced
- 1 tbsp Oil
- 10 1/2 oz Cream of Mushroom Soup
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Dried Thyme
- 1 each Egg, well beaten with a splash of water
Instructions
- Preheat oven to 350°F. Poke holes with a fork in the bottom of one pie crust. Bake in oven for 10 minutes or until slightly browned. Remove and reserve.
- Heat a large skillet on medium-high heat. Add oil and when hot, add Trinity vegetables, carrots, and garlic. Cook for 2 minutes. Turn down heat to low.
- Add turkey, mushroom soup, peas, and thyme to pan. Season with salt and pepper and stir gently to combine. Cook for 1 minute or until mixture begins to bubble around the edge of the pan.
- Fill the pre-baked pie crust with turkey mixture. Remove uncooked pie crust from metal tray and place upside down on top of filled pie crust. Press down gently.
- With the tip of a sharp knife, cut 3 slits into the top crust. Brush top of crust with egg wash.
- Bake at 350°F for 20 minutes or until top crust is browned. Let stand 5 minutes before cutting.
