Ingredients

  • 1 7/10 lb Fresh pork belly, cut into two equal sized pieces that will fit into instant pot
  • 2 tbsp Adams Reserve Gunpowder Rub, or as needed
  • 1/4 cup(s) Calabrian chili oil
  • 9 oz ciabatta bread, loaf cut in half or railroaded, then slice into approximately 1/2 inch slices, plus more as needed. (Not cut bread like a sandwich forming top and bottom)
  • 8 oz slices of baby swiss cheese, slices cut in half and used as needed
  • 1/4 cup(s) yellow mustard
  • 1/3 cup(s) SMP rub del norte wet rub
  • 1 cup(s) dill pickle slices, or as needed

Instructions

  1. Season pork bellies liberally on all sides with gunpowder rub. Add oil to instant pot then place pork bellies fat-side-up. Add lid to instant pot and set to manual 40 minute setting.
  2. Allow to depressurize before taking lid off. Let pork cool completely then cover in plastic wrap and place in fridge for at least 1 hour before slicing into approximately 1/4 inch slices.
  3. While pork is cooling, preheat oven to 350ºF. Line a sheet pan with parchment paper and arrange slices of bread evenly in the pan.
  4. Place a slice of folded cheese on each piece of toast. Bake for 10 to 12 minutes or until cheese is just melted. Set aside.
  5. Place a sauté pan over medium-high heat. Add a few slices of pork belly to pan at a time. Sear for 3 to 4 minutes per side or until nicely crispy on both sides.
  6. In a small bowl combine mustard and wet rub together, mix well and set aside.
  7. To build toasts place a piece of crispy pork belly on each cheese toast followed by mustard mixture and a couple of pickles. Repeat process with each additional toast.
  8. Chef's Note: The colder the pork belly is the easier it is to cut into slices. You can cook pork belly ahead of use and let it sit overnight in fridge for best results.
